An excellent source of vitamin C - I make sure bottles are sterile and well-sealed; once opened, I keep them in the fridge.
- Ingredients:
4 cups rosehips
2 cups water
1 cup sugar - Wash rosehips and slice off the tops and tails. Boil hips and water for 20 minutes in a covered saucepan.
- ESSENTIAL STEP - strain through a jelly bag or muslin. Local school kids use rosehip seeds as a source of itching powder - and it does itch! You do NOT want itching powder going through your digestive system.
- Return clear juice to the pan adding the sugar. Simmer strongly for five minutes, stirring well. Pour into sterilized dark glass bottles and keep in the 'fridge. Can be taken by the spoonful or diluted in water.
