»  Strawberries - grinding a little black pepper over strawberries brings out the flavour!

»  Raspberries - fresh raspberries with a garnish of fresh green basil.   A colleague in my current staff-room assures me this is delicious - as soon as she said this, it certainly sounded right!

Favourite Christmas pudding - a Summer Pudding, using frozen allotment fruits!   I always freeze enough of the very finest berries just for this.   To make it a little more special, make a special bread - I particularly like an Orange and Almond Bread

  • Put 1 beaten egg, 1 cup of tepid milk, 4 tablespoons melted butter, 5 tablespoons sugar, ½ teaspoon salt, 3 cups white bread flour, 1 cup flaked almonds, the grated zest of 1 orange, and 1½ teaspoons yeast into the breadmaker.   Switch on, set to Basic programme for a 1.5lb loaf.
  • When the bread is finished and cool, make your summer pudding!
